  • 1 can (15 oz) pineapple chunks, drained (reserve ¼ cup juice)
  • 2 cups cooked white rice
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • ½ tsp garlic powder
  • ½ tsp ground ginger

Instructions

  1. Gather and prep all ingredients—dice the chicken and bell pepper, and drain the pineapple while reserving some juice.
  2. In a large skillet, heat olive oil over medium heat. Add diced chicken seasoned with salt and pepper; cook for 6–8 minutes until browned.
  3. Stir in the diced bell pepper and cook for an additional 2–3 minutes until tender.
  4. Add drained pineapple chunks to the skillet; cook for another 2 minutes.
  5. In a small bowl, whisk together the reserved pineapple juice, soy sauce, honey, garlic powder, and ground ginger until combined.
  6. Pour the sauce over the chicken mixture in the skillet; stir to coat evenly. Simmer uncovered for about 4–5 minutes until slightly thickened.
  7. Serve over cooked white rice and garnish with green onions or sesame seeds if desired.
