  • 4 boneless skinless chicken breast halves (4 ounces each)
  • 2 cans (8 ounces each) unsweetened pineapple chunks
  • 1 tablespoon canola oil
  • 1 tablespoon honey
  • 1 tablespoon reduced-sodium teriyaki sauce
  • 1 teaspoon cornstarch
  • 1 tablespoon all-purpose flour
  • Hot cooked rice
  • Optional: Thinly sliced green onions and sesame seeds

Instructions

  1. Pound the chicken breasts to about 1/4-inch thickness and coat them with flour.
  2. In a skillet, heat canola oil over medium heat and brown the floured chicken for 3-5 minutes per side until fully cooked. Remove from skillet.
  3. Drain pineapple chunks, reserving 1/4 cup juice. Combine cornstarch with juice in a bowl until smooth.
  4. Return the mixture to the skillet with honey and teriyaki sauce; stir until thickened.
  5. Add pineapple chunks back into the sauce along with the chicken; heat through and serve over hot cooked rice.
