  • ¼ cup granulated sugar
  • 1 tsp salt
  • 2 ¼ tsp active dry yeast
  • 1 cup cold unsalted butter
  • ¾ cup cold milk
  • 1 cup ground pistachios
  • ½ cup powdered sugar
  • ¼ cup almond flour
  • ¼ cup unsalted butter (softened)
  • 1 egg (for filling)
  • 1 egg (for egg wash)
  • 2 tbsp crushed pistachios (for topping)
  • Optional: honey for glaze

Instructions

  1. In a mixing bowl, combine flour, sugar, salt, and yeast. Mix in milk until dough forms.
  2. Add cold butter by slicing it thinly and incorporate between folds of dough. Chill for at least 1 hour.
  3. Roll out the chilled dough into a rectangle. Fold into thirds like a letter; repeat rolling and folding several times.
  4. For the filling, mix ground pistachios, powdered sugar, almond flour, softened butter, egg, and vanilla until smooth.
  5. Roll out dough again into triangles and place a spoonful of pistachio cream at the wide end; roll to form crescents.
  6. Let rise for about 1 to 1.5 hours at room temperature.
  7. Brush with egg wash and sprinkle crushed pistachios before baking at 375°F for about 18 to 22 minutes.
