  • 450 g skinless chicken fillets, sliced thin
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 can pineapple chunks, drained
  • 60 ml soy sauce
  • 60 ml honey
  • 60 ml rice vinegar
  • 1 clove garlic, minced
  • 2 cups cooked rice

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add sliced chicken and cook for 5-6 minutes until golden brown and cooked through. Remove and set aside.
  2. In the same skillet, sauté onion for 2-3 minutes until translucent. Add garlic and sauté for an additional minute.
  3. Stir in pineapple chunks, soy sauce, honey, rice vinegar, and optional red chili flakes. Allow to simmer for a few minutes.
  4. Return the chicken to the skillet and mix well to coat with the sauce. Cook for another 3-4 minutes until heated through.
  5. Serve hot over cooked rice.
