  • 1 cup fresh pineapple chunks
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1 small jalapeño, seeded and finely chopped (optional)
  • 1 tbsp lime juice (for salsa)
  • Salt to taste (for salsa)
  • 8 small corn or whole wheat tortillas
  • 1 avocado, sliced or diced
  • Fresh lime wedges

Instructions

  1. In a mixing bowl, whisk together olive oil, lime juice, chili powder, smoked paprika, cumin, garlic powder, salt, and pepper to create a marinade.
  2. Add the chicken pieces to the marinade and toss to coat. Let sit for at least 15 minutes.
  3. While marinating, prepare the salsa by mixing diced red onion, cilantro, jalapeño (if using), lime juice, and salt in a small bowl.
  4. Heat a skillet over medium-high heat and cook the marinated chicken until golden brown and cooked through (internal temperature should reach 165°F).
  5. Warm tortillas in a skillet or microwave.
  6. Assemble tacos by layering cooked chicken, pineapple chunks, salsa, avocado slices (optional), and a squeeze of fresh lime juice.
