  • 1/2 cup pineapple juice
  • 1/3 cup low sodium soy sauce
  • 1/3 cup low sodium chicken stock
  • 1/3 cup hoisin sauce
  • 1/2 cup brown sugar
  • 1 tablespoon minced fresh garlic
  • 2 teaspoons cornstarch
  • 1 tablespoon olive oil
  • 8 boneless, skinless chicken thighs (cut into cubes)
  • 1 cup diced pineapple
  • Optional: 1/2 cup roasted, salted cashews

Instructions

  1. In a medium saucepan, whisk together pineapple juice, soy sauce, chicken stock, hoisin sauce, brown sugar, garlic, and cornstarch. Bring to a boil and reduce until syrupy.
  2. Heat olive oil in a nonstick skillet over medium-high heat. Add cubed chicken and season with salt and pepper. Cook until no longer pink (about 5 minutes).
  3. Pour prepared sauce over cooked chicken; stir in diced pineapple and optional cashews. Cook for an additional minute.
  4. Serve over rice or in hollowed-out pineapples for an eye-catching presentation.
