  • 1 quart (16 ounces) ripe strawberries, washed, hulled, and sliced
  • 1 tablespoon lemon juice
  • to 1/2 cup (70100 grams) sugar (adjust based on strawberry sweetness)
  • 1 tablespoon quick-cooking tapioca or cornstarch
  • Pinch salt

Instructions

  1. Blend half of the sliced strawberries with lemon juice until smooth.
  2. In a pot, mix sugar with quick-cooking tapioca (or cornstarch) and salt. Stir in the blended strawberry mixture and heat over medium until boiling.
  3. Lower heat to simmer and cook for about 5 minutes until thickened. If using cornstarch, skip simmering once it thickens.
  4. Add the remaining sliced strawberries and stir until it returns to a simmer. Remove from heat immediately.
  5. Transfer to a container to cool before storing in the refrigerator or freezer.
