  • 200 g de farine T55
  • 140 g de poudre d’amandes
  • 75 g sucre
  • 150 g de margarine
  • 50 cL de lait de soja
  • 30 g de fécule de maïs
  • 75 g sucre blond
  • 3 g d’agar agar
  • 1 poignée de sauge ananas fraîche
  • 40 g fécule de maïs
  • 1 c. à café de vanille liquide
  • 250 g de fraises

Instructions

  1. For the crust: Mix almond flour, sugar, and margarine until crumbly. Press into a tart pan and chill for 30 minutes.
  2. Bake at 350°F (180°C) for 20 minutes until golden brown. Cool completely.
  3. For the custard: Heat soy milk, then combine cornstarch, sugar, and agar-agar in another bowl. Gradually mix into hot milk until thickened. Stir in chopped pineapple sage and cool slightly.
  4. Pour custard into the cooled crust and refrigerate for at least 2 hours to set.
  5. Slice fresh strawberries and arrange on top just before serving.
