  • 1/4 cup + 1 tbsp sugar
  • 3 1/4 tsp active dry yeast
  • 6 1/2 tbsp cold milk
  • 7 tbsp unsalted butter (room temperature)
  • 2 tsp salt
  • 1/2 cup + 1 tsp cold water
  • 1 cup + 2 tbsp cold unsalted butter (for layering)
  • 1 egg and 1 egg yolk (for egg wash)

Instructions

  1. In a bowl, combine flour, sugar, yeast, milk, room temperature butter, and salt; mix and knead until smooth. Gradually add cold water.
  2. Shape into a rectangle, wrap in plastic wrap, and refrigerate overnight.
  3. Prepare the butter layer by pounding cold butter between parchment paper into a rectangle; freeze both the butter and dough for 20 minutes.
  4. Roll out the chilled dough into a larger rectangle, place butter on half of it, fold over and seal.
  5. Roll out again to create layers: fold and chill as directed to achieve the desired flakiness.
  6. Cut triangles from rolled dough, shape into croissants, cover with plastic wrap and freeze for another 15 minutes.
  7. Preheat oven to 375°F (190°C). Brush with egg wash and bake for about 16-20 minutes until golden brown.
