  • 2 tbsp low-sodium soy sauce

  • Bell peppers and onions, cut into bite-sized pieces

Instructions

  1. In a mixing bowl, combine all ingredients for the marinade: chicken, garlic powder, black pepper powder, salt, corn starch, and soy sauce. Let marinate for at least 15 minutes.
  2. In a separate bowl, mix the sauce ingredients: pineapple juice, brown sugar, rice vinegar, paprika, ginger, garlic, cornstarch, and water.
  3. Heat 1 tbsp sesame oil in a skillet over medium-high heat. Add the marinated chicken and cook until browned and cooked through (about 5-7 minutes).
  4. Remove chicken from the skillet and set aside. Add remaining sesame oil to the skillet along with onion and bell peppers; stir-fry until crisp (about 3-4 minutes).
  5. Return chicken to the skillet with the prepared sauce; simmer until well-coated.
  6. Serve hot over rice or noodles.
